Mmm my new favorite healthy snack are these tasty zucchini fries! Sounds like an impossible combination, but it turns out if you cover anything in cheese and salt it’ll turn out pretty good!

These are also super easy to make, and really fast too. I dip them in sriracha mayo, jalapeño jam or even just humus and it’s all so delish.

You just need to chop up some zucchini into fry size strips (the thinner the better) and toss them in a bowl with olive oil, salt and garlic. Or whatever you like, I just prefer to keep it simple. Then I put some olive oil on the pan I’m baking them on and set my oven (okay fine, for me it’s a toaster oven, but whatever) to 450.

You can use breadcrumbs or whatever you’d like but honestly they all taste the same once they’re baked so you might as well keep it even healthier with something like the wheat flaxseed crackers I use. I just put them in a ziplock bag, crush them with a rolling pin and pour them onto a plate.

After that you can start rolling your zucchini fries in the crumbs and placing them on the pan. The final touch is covering them in cheese! I used mozzarella because it’s my favorite.

I baked them for about 7 minutes before taking them out and flipping them over and baking them for another 5-7. Just keep an eye on them because they don’t take very long at all.

And there you have it, delicious guilt free fries for those of you who are like me and are constantly eating.
