The week before the holiday break always feels a bit agonizing. am I right?

I have a very busy next couple of weeks with the holidays, friends visiting and two short trips so I spent most of last week trying to get ahead of my workload and enjoy a less hectic week before things got crazy.

Here were the best parts of my week:

BIG BEAT RED WINE

This is one of the four delicious bottles Winc sent me a few weeks ago and I LOVE it. I am not a big red wine person, I always go for a white or rose. But I’ve been trying to grow up and start enjoying what is definitely a more seasonally appropriate wine selection and this was such a tasty choice!

It’s a red blend that is super smooth and drinkable. Not too bitter at all. I’m a huge fan and my roommate liked it as well. We sipped on it while eating pizza and watching Schitt’s Creek which is my ideal evening.

For a gift exchange I did with a few girlfriends I requested “a cool hate that will hide my dirty hair but won’t make my head look like an egg” and my friend Melissa definitely delivered!

I’m a cool hat girl now so I guess I should get some joggers and call it a day, eh?

A COZY VEST FOR LAYERING

My favorite look of the week was definitely this cozy rainy day outfit and it reminded me of how much I love this comfy long vest! It’s pretty much just a wearable blanket which I appreciate thoroughly.

It’s a great layer to have because 1. it’s chic and 2. it’s warm without adding the bulk of another layer of sleeves. Highly recommend!

A HEALTHY DRUNK FOOD ALTERNATIVE

We all have our post drunken night out go-tos when it comes to whipping up something easy at home at 3 am. I personally looooove a quesadilla but wanted to recreate this late-night favorite in a healthier way for my weekly meal prep.

I found this great recipe online for a baked quesadilla that uses olive oil instead of butter so it’s not as fatty (or delicious I’ll be real, but it was still great!).

I used vegan mozzarella (not vegan but I try not to eat a lot of dairy during the week), mushrooms and spinach and they were obviously super easy and really tasty!

SURPRISING MY BFF

This was hands down the highlight of my week because I got to visit my BFF for her 30th 😀

I flew in on Friday afternoon and knocked on her door and she had no idea! Her boyfriend planned the whole thing and it was so sweet getting to see her on such a special weekend. We sobbed LOL.

We spent the weekend hiking and eating delicious food. It was the perfect couple of days to reconnect and celebrate her. Plus I got to reunite with my doggy niece which was definitely a highlight!
